If you are someone who wants to try cake and prepare different flavors with less efforts, then do read it till the end.
I do say that I like to try new recipes but let me admit it, I used to get scared to bake anything in the oven until I tried it 2 years back. It is not that we don't have an oven at home. My parents have been using the over from a decade. It is that I never tried.
On New Year's Day 2018, I baked my first cake. I got the recipe for simple sponge cake from my friend who also likes cooking a bit. But the confidence to bake it came from my brother. When it comes to cooking, he is always better than me.
It is through him I came to know the importance of beating the egg mixture to get the real "Sponge" cake feel while you eat. He assisted me with the entire procedure as he saw me struggling and doing it in an incorrect way. We baked 2 cakes that day. One for family and the other for colleagues. And all gave positive feedback. Credits to my brother and the friend who shared the recipe. :)
This year again, I wanted to try something during the weekend. Mom suggested to bake cake. I was doubtful as I didn't bake anything after 2018 New year cake. I checked for a few cake recipes. Cup cakes captured my mind and also because I used to watch the series Two broke girls, I thought of trying different cake flavors and decorating it.
I decided to go with three different flavors: Vanilla cake, carrot cake and chocolate cake.

Well, I could not do all 3 flavors and decorate them with icing, but enjoyed baking the cake on my own and prepare two different flavors.
If you have never baked before or are new to baking, you will wonder "Why different flavors? Just try one for now and then add up."... Believe me. It is very simple. And if you are someone like me who likes to keep things simple and yet try to get more with less, you will love it. You just need to prepare the basic dough to get all other flavors you want.
I prepared my basic dough with the below ingredients which I used to prepare cake of various flavors.
Ingredients for basic dough:
- All purpose flour - 250 gms
- Sugar - 250 gms
- Butter - 250 gms
- Eggs - 4
- Baking powder - 1 tsp
- Salt - (for taste. If you are using unsalted butter, you will have to add more salt.)
- Milk - 2 tbsp
The above mixture will give you a basic dough which can be used for any flavors. It can be carrot, banana, mango, chocolate, anything that comes to your mind.
I divided this mixture into 2 parts to make two different flavors.
For vanilla cake:
I added 2 tsp of vanilla essence to the dough. (You can either increase or decrease the quantity depending on your taste.)
Mix it and bake it. Your vanilla cake is ready.
For carrot cake:
I added 1 big carrot (grated), chopped raisins and walnuts, cinnamon powder (1 tsp).
Mix it and bake it. Your carrot cake is ready.
Tip: Be generous with raisins and walnuts and they add to the taste.
And if you want to try chocolate flavor, just add cocoa powder and mix it. Do not substitute cocoa powder with other hot chocolate mix. I read a few articles from professional bakers and they don't suggest it.
I am not giving the instructions to prepare cake as I am still working on it but if you are looking for something simple to go with the ingredients and create different flavors, this will help you as it helped me too.
Next, I want to try chocolate, mango and few other flavors and with frosting too.
